Pork roast (approx. 5 lbs.)
1 c. ketchup
1/3 c. mustard
1 tbsp. each salt & pepper
1 c. vinegar
1 tbsp. Worcestershire sauce
Dash of lemon juice
Pinch of cayenne
2 tbsp. brown sugar
Wash pork roast well and sprinkle with salt and pepper. Rub all of the seasonings well into the meat using your hands. Put the pork roast on the grill and sear all sides. Reduce the heat and cook slowly until done. Turn often. Cooking time should a minimum of 1 1/2 to 2 hours. For delicious, tender meat the slower the better.
Mix last 8 ingredients for sauce. When meat is about half done, baste meat frequently to soften and moisten. Save remaining sauce to serve over meat (great sliced or diced).
The pork roast is done when the internal temperature reaches 145 degrees.

Generally speaking, the length of time to grill a pork roast is 20 minutes per pound.
A pork roast tastes best when it has had the opportunity to experience a slow and even grilling time. You don’t want to have the coals or gas grill too hot or it will dry out the pork roast quickly. There’s a little bit of prep time to keep in mind as you figure out how long to grill the pork roast.
- If you want to marinade your pork roast you will want to do this prior to grilling.
- If you want to rub on any seasonings this would need to be completed first as well.
- Preheat the gas grill to 350ºF and heat the coals of a charcoal grill to a medium-low heat where you can see the embers and coals burning, but your hand can remain above the coals for a few seconds.
- Your pork roast will need indirect heat. This can be accomplished a few different ways. On a charcoal grill shovel the coals to a side of the grill or form a circle with them. Many gas grills have secondary burners with access to the heat from the grill or place the roast well above the heat.
- You can cook the pork roast two ways on the grill. The first is by placing it on the center of the grill bone side down. The other is by placing it within a roaster pan with about an inch of water in the bottom to retain the moisture.
- Either way 45 minutes into the grilling time for the pork roast you should check its internal temperature to see if it is done (155ºF).
- Let the roast rest off the heat for 15 minutes before you serve.
